The Good News The red lentils in these spicy, Indian-inspired vegetarian burgers don't need to be soaked and cook super-quickly. What's more, they are rich in B vitamins, fiber and folate, which help fight heart disease and birth defects.

Cumin-Spiced Red Lentil Burgers

Fabulous recipe! Only glitch was when the egg appeared to cook upon being added to hot carrot/onion mixture, but it did not matter in the end. Held together very well and was very tasty. I will make these again.

I soaked the lentils overnight and did not boil them, then mixed them will all the other ingredients except the carrots, which I omitted. Then I used 2 spoons to form them into balls about size of walnut and baked them in a very hot oven. Delicious and crispy!
